What is the most stable and best oil for making a stir fry? I know that high heat is not good for oils, but I do saute some things in oil from time to time.

I think coconut oil might be good for stir frying. I use it to scramble eggs, cook meat, etc. Coconut oil is very good for you. You will probably hear otherwise, but none the less it is true. Cherri Calbom has a book out called the coconut diet. You can get it at the library, or order it on Amazon, it will give you a lot of good info.l

I thought that canola oil was good. Also we use a lot of olive oil in my house- not great for frying but gives a delicious and healthy flavor to many dishes.

Extra Virgin Olive Oil is the way to go in my book. Expensive, but what a great taste like StressMom said. I keep in in a glass jar by the stove, with about 1/4 of it is safflower or vegetable oil mixed in. Keeps it more stable I think.

I mix extra virgin olive oil with vegetable. I don't think it changes the taste a bit. It brings the price way down though!

Has anyone heard of rapeseed oil? I herad this is cheaper than olive oil but with the same benefits and flavor.
